How to keep up with birthdays




  I recently came up with a new idea. I wanted a container to hold all of my (birthday, anniversary, graduation, christmas) greeting cards for the year. I was going to purchase one online, but they were all to small. My family is huge and that little box I saw was not going to hold all those greetings.

June 24th Cardmaking & Scrapbook Party


We had a fantastic evening of good food and crafting. My husband Ed smoked some ribs and they were fall off the bone delicious! The ribs went well with the beans and cookies for desert.

Best Breakfast Ever!

Toast with Omelete in the Middle


I saw this delicious recipe posted on Facebook  and it inspired me to make breakfast this morning. It was a hit! My husband loved it and my 17 year old daughter as well. We will definetly be making this again in the near future. It was delicious!

Directions:

This recipe requires some prep work, if you don't like to do very much in the mornings it could also be prepared the night before. 

Ingredients:
You will need Bread (We used Sourdough Bread), Eggs, Ham, bellpepper, shredded cheese, onions (optional), milk (optional), salt & pepper to taste. 



  Clean and remove centers from bellpeppers (I used 4 different colors)


Cut the bellpeppers into small squares. 
(I think the colors are beautiful)


  Cut up the ham and onions (if you choose to use onions)


Saute the bellpeppers


Blend two eggs with a little bit of milk, cheese, salt & pepper 
(I sometimes sneak a little cheese in too)


Saute onions (optional)


Mix onions and bellpepper


Add cut ham to the micture and continue to saute until auromatic.


Cut out center of bread and add mixture, let sit for a few minutes.


Pour egg micture over the bellpepper micture


Sprinkle on a little cheese, let it melt 


Add the bread center on top of the sprinkled cheese and butter bread then flip and let it brown for a bit. 


After the edges are lightly browned flip back around.


Serve Omelette Toast on plate.


Enjoy!

June is Adopt a Cat from a Shelter Month!

We adopted two adorable little kittens from our local Animal Shelter. 
With kitten season, they had more cats in need then ever.

New Polish Pottery Find

  Today I did something random. I scrolled through our local buy & sale local online advertising, found an inexpensive table and two chairs for my sons place. It was a cute little round wooden table that will fit nicely into is snug fitting kitchen. I was very proud of myself for finding it. But that is not all, while at the yard sale-ran by a nice little German lady-my husband discovered a table full of polish pottery. These will be the perfect dishes for our next christmas party.

The Low Oxalate Diet

A low-oxalate diet is a diet that is low in oxalates. Oxalate is a chemical found mostly in plant foods. A low oxalate diet can help prevent future kidney stones.  The most common type of kidney stone is calcium and oxalate.


The following are low oxalate foods

Meat: 

All fresh and frozen meats: beef, pork, chicken, turkey; fish and seafood such as flounder, salmon, tuna, shrimp, scallops; and eggs. (Avoid cured meats.)

Dairy: 

Dairy products made with cow’s and goat’s milk, including buttermilk, skim milk, 1% and 2% milk, whole milk; butter; all cheeses, including cheddar, feta, farmer, goat, mozzarella, Parmesan; sour cream, whipping cream, half & half; yogurt, plain, or with low oxalate fruit.

Fruits: 

Apples, avocados, cherries, cranberries, bananas, melons (cantaloupe, honeydew, watermelon), seedless grapes (red and green), peaches, plums.

Vegetables: 

Asparagus, broccoli, cauliflower, cucumbers; iceberg and Romaine lettuce; radishes, cabbage, corn, pickles, mushrooms, onions (yellow and white); squash (zucchini, acorn, and yellow); red sweet peppers, turnips (root), water chestnuts.

Beverages: 

Spring and filtered water, chamomille tea, ginger ale, beer, apple juice, apple cider.

Chocolate: 

White chocolate.

Grains: 

Tapioca Flour, White and wild rice; barley.

Herbs and Spices: 

Basil, cilantro, mustard, nutmeg, white pepper, saffron, tarragon, vanilla, salt.

Condiments: 

Mustard, mayonnaise, vinegar.

Nuts, Peas and Seeds: 

Coconut; black-eyed peas, green peas, pumpkin seeds and yellow split peas; flax seeds.

Fats and Oils: 

All vegetable oils, including olive, canola, safflower, soy; margarine & coconut oil.


Sweets and Sweeteners: 

Sugar (white), maple syrup, corn syrup, honey.



My husband has recently been diagnosed with hyperoxalaria PH1, so now I am trying out some low oxalate meals and recipes. Wish us luck!

My First Happy Mail


I received my first ever "Happy Mail" from Kyra Pace. I love it! I have received mail in the past through penpals and Friendship books (FB's). This is my first time ever receiving "Happy Mail"!

Happy mail is simply mail that makes you happy. In this case, Kyra a very creative and talented artist from the Netherlands -  made a beautiful butterfly greeting card.  She also enclosed some paper and stickers for me to use for journaling and /or art. I already have an idea of what I'm going to do with the items. See "here"
