Chicken & Fish for a month!

My husband approached me with a wonderful idea this month. He mentioned that we both could eat a little healthier and what if we just ate chicken and fish meals for a month? So, we are going to be adventures this month and have chicken and fish for the next 30 days. Let's see what happens....

Day 1: Chicken a la king - see recipe "here". I forgot to thaw out the puff pastry shell, so we ate it with angel hair pasta instead. It was still very delicious. The next day I used the puff pastry shells as sides instead.

Day 2: Chicken Penne Alfredo, Spinach & Cheese Swirls and desert Mini Strawberry Napoleon.
This dish was a hit with the family and they absolutely loved the desert.

Day 3: Chicken (and Ham) Cheese Sliders
My husband wanted to cheat today and asked for ham. Sliders are super fast and easy to make. 

Ingredients:
1/2 package of sweet Hawaiian rolls
Deli meat slices- I used ham and chicken
1/2 package of Swiss cheese slices 
1/2 cup melted butter
1 tsp. Worcestershire sauce
1 tsp. Ed’s special mustard sauce or plain mustard
1 tsp. Garlic salt 
Pepper, optional 

Instructions:
  1. Preheat oven to 350 degrees. Butter pan before adding the sweet bread and set aside.
  2. Slice rolls in half. Place bottom part of the rolls in the buttered pan. 
  3. Add the deli meat and cheese on top of the bottom half of the rolls, then add the top half.
  4. In a bowl melt the butter, add the Worcestershire sauce, mustard, garlic salt and pepper to taste.
  5. Slowly pour mixture over the rolls and bake in the oven.
  6. Cover rolls with foil and bake for 20 minutes. 
     Remove foil and bake for another 5 minutes until the top is crispy and the cheese is melted.
  7. Enjoy your sliders, feel free to add your own twist. 

    It tastes delicious with some potato salad.
I added mashed potatoes on the side. The leftover buttermilk will be great to have for Saturday morning. I’m already craving buttermilk pancakes.

Day 5: Fish Tacos with shrimp and scallops.

Day 6: Chicken Kiev from Schwans

Day 7: Buttermilk pancakes for breakfast and chicken sandwich for lunch.

Day 8: Chicken and Chicken Rice-a-roni

Day 9: Salmon Patties using Ritz crackers.

Day 10: Cordon Bleue from Schwanz 

Day 11: Florentine Shells

The Low Oxalate Diet

A low-oxalate diet is a diet that is low in oxalates. Oxalate is a chemical found mostly in plant foods. A low oxalate diet can help prevent future kidney stones.  The most common type of kidney stone is calcium and oxalate.
