Best Breakfast Ever!

Toast with Omelete in the Middle


I saw this delicious recipe posted on Facebook  and it inspired me to make breakfast this morning. It was a hit! My husband loved it and my 17 year old daughter as well. We will definetly be making this again in the near future. It was delicious!

Directions:

This recipe requires some prep work, if you don't like to do very much in the mornings it could also be prepared the night before. 

Ingredients:
You will need Bread (We used Sourdough Bread), Eggs, Ham, bellpepper, shredded cheese, onions (optional), milk (optional), salt & pepper to taste. 



  Clean and remove centers from bellpeppers (I used 4 different colors)


Cut the bellpeppers into small squares. 
(I think the colors are beautiful)


  Cut up the ham and onions (if you choose to use onions)


Saute the bellpeppers


Blend two eggs with a little bit of milk, cheese, salt & pepper 
(I sometimes sneak a little cheese in too)


Saute onions (optional)


Mix onions and bellpepper


Add cut ham to the micture and continue to saute until auromatic.


Cut out center of bread and add mixture, let sit for a few minutes.


Pour egg micture over the bellpepper micture


Sprinkle on a little cheese, let it melt 


Add the bread center on top of the sprinkled cheese and butter bread then flip and let it brown for a bit. 


After the edges are lightly browned flip back around.


Serve Omelette Toast on plate.

The Low Oxalate Diet

A low-oxalate diet is a diet that is low in oxalates. Oxalate is a chemical found mostly in plant foods. A low oxalate diet can help prevent future kidney stones.  The most common type of kidney stone is calcium and oxalate.
