Meatless Monday & Zucchini Meatballs for dinner

Meatless Monday can be easy. In place of meat , look for foods that contain protein such as: beans, legumes, nuts, seeds and "yes" eggs are okay. 

It's important to start your day with breakfast. Today I enjoyed a wonderful breakfast with my youngest daughter Kirstin. The breafast we chose was not the healthiest but it fit into our Meatless Monday and it tasted yummy.

Found this recipe on Pinterest and it was delicious. The recipe recommended to create 12 zucchini balls. I thought they were a little big and ended up a little mushy in the middle. I would recommend smaller balls, so that the insides are more firm.
