Low carb peanut butter cookie sandwiches

Ingredients:

1 cup crunchy peanut butter 
1 large egg
2/3 cup monk fruit 
1/2 tsp. vanilla extract 

Mix all ingredients in bowl. Bake at 350, for 10-15min. 


Filling:

1 8 oz. Block of Philadelphia cream cheese 
1 cup whipping cream 
1/2 tsp. Vanilla extract 
3 Tsp. Splenda

Mix all ingredients in bowl on high, freeze for 30 minutes. Enjoy!
