German Pancakes
(Flädle for Flädlesuppe)

Ingredients
- 5–6 eggs
- 3 cups milk
- 3 cups all-purpose flour
- ½ teaspoon salt
- 2 tablespoons oil (for frying)
Instructions
- In a blender, combine the eggs, milk, flour, and salt. Blend until the batter is completely smooth.
- Heat a small amount of oil in a frying pan over medium heat.
- Pour a thin layer of batter into the pan and swirl to coat the bottom evenly.
- Cook until the pancake is lightly golden, then flip and cook the other side.
- Repeat with remaining batter.
To Make Flädlesuppe (German Pancake Soup)
- Roll cooled pancakes into a loose cylinder.
- Slice into thin strips.
- Place the strips into bowls and pour hot broth over the top.
⭐ Tip: These pancakes are meant to be thin like crepes, not thick like American pancakes.
Slice up leftovers for soup.
